banana bread

This healthy alternative to pasta is super easy to make. Crank your oven to 400 degrees and let's get started!


2 cups Flour

2 1/3 cups mashed overripe banana

1/2 cup butter

1/4 tsp salt

1 tsp baking soda

3/4 cup brown sugar

2 eggs, beaten

Preheat your oven to 350 degrees F (175 degrees C). Prepare a loaf pan by greasing it (I usually just use a spray oil, like PAM) and then "flouring" it. To do this, simply put a bit of flour in the greased pan. Shake the flour around until it covers the majortiy of the inside of the pan. Flouring the pan rather than simply greasing it will keep your bread from getting soggy and make getting it out of the pan even easier!

Combine your flour, baking soda and salt.

Mix together your softened butter and brown sugar. Stir in eggs and mashed bananas until well blended.

4. Put it all together

Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

5. bake it up!

Bake in your preheated oven for about an hour. You can check to see if your bread is done by doing the old "stick a toothpick into the middle and see if it sticks." But, keep in mind you want your bread to be moist! So, don't add too much additional time. I wouldn't go over an hour and fifteen minutes, absolute maximum.

6. cool it properly

After baking, only let your loaf cool in the pan for about 10 minutes or so, and then transfer it to a wire rack or plate. The loaf should come out easily upon turning the pan upside down (don't be afraid to just flip it over, trying to scoop it out upright will likely damage your gorgeous loaf). Doing this prevents the hot pan from continuing to cook the outside of the loaf, therefore keeping your bread soft and moist!
